2015 Food Wine Beer & Spirits Experience
Today marks the official beginning of the 2015 EatLafayette Food Wine Beer & Spirits Experience. This week of the campaign is designed to show off both our EatLafayette restaurants and our beverage sponsors. Paul Ayo, owner of E’s Kitchen, is the chairman of this event, and he and the restaurants have been working together to create the exciting pairings and specials offered. The anticipation has been building up for weeks and now, the featured experiences are finally available to the community! Kicking off the 2015 Food Wine Beer & Spirits Experience is the Chef’s Table Experience tonight hosted by Paul Ayo at E’s Kitchen. This event is a private dining experience for the 2015 Chef’s Table Experience contest winner, Mark Whitney, and his friends and family. The contest required participants to choose one of four baskets and then tell the judges what meal they would create with the ingredients. Mark chose the basket containing chicken thighs, spinach, new potatoes, peanut butter and Rêve Coffee Roasters coffee beans. The winning meal he created is as follows:
 
Roasted chicken thighs seasoned in fine ground coffee, dried lemongrass, white and black pepper, thai red chili pepper, lime zest, ground ginger, dried mint, garlic powder, and toasted, ground coconut. 

Sauce on top of roasted chicken: peanut butter and thai red chili sauce with sweetened, condensed coconut milk and a bit of brown sugar. 

Thai stir-fried spinach stir-fried in oyster sauce, fish sauce, and sesame oil. 
 
Fried, thin strips of new potato (seasoned with garlic and fried in duck fat) served atop stir-fried spinach for crunch and texture. 
 
Congratulations again to Mark Whitney on this creative dish! He will be honored tonight with a recreation of this meal by Chairman Paul Ayo and Chefs Holly Goetting of Charley G’s, Manny Augello of Bread & Circus Provisions, Ryan Trahan and Cory Bourgois of Dark Roux., Marc Krampe of Social Southern Table & Bar, and Alex Andrade of Rusted Rooster.
